Clove is not a commercial crop in Idukki district and every farmer has a tree or two in their house for their personal consumption. Instead of harvesting clove at once, as it is generally done,we harvest it multiple times as it matures to ensure stronger flavour. When the clove turns light pinkish in colour from light green, it is matured and ready to harvest. After manually taking out clove from the tree, it is hand sorted and sun dried (or dried using a dryer). A good quality clove is dark brown in colour and should have a crown (round head) for maximum percentage in a given sample. The litre weight of our clove is around 500 gm/litre.
